I watched the anime a while back, and really loved the vibe. Does anyone know why there isn't anything on a Season 2? I read somewhere that it was because the studio behind the amazing backgrounds shut down, but was anything officially announced?

So far, nothing was heard. Given that it's not the lack of source material they lack, we might assume, that season 2 is not coming.
I think the anime was a promotional for the books which really sucks because the animation team did an absolutely fantastic job on the adaptation. You could say this is like Classroom of the elite. They also did a good job on the animation, but it was just promotional material for the books. Still, I would like to hang on to a thread of hope that maybe once the story is all said and done they'll animate the rest of the books.
Like other comment said the anime, like a lot of light novel adaptation, was mostly advertisement for the novels, and while it did pretty well and was quite popular, it was nothing groundbreaking. Also the publisher, Overlaps is relatively small and can't finance a lot of adaptations so they will likely give priority to advertising other series over Grimgar since it wouldn't bring as much new reader as a first season.
Moreover, it seems like Grimgar's anime was made with the idea that it would not get a sequel as they removed most of the foreshadowing, which wasn't relevant to the first 2 novels but is vital for the rest of the plot.
Finally, making a complete anime adaptation would be night impossible so they may as well keep the anime as is, where it has a mostly satisfying ending rather than making a s2 which would inevitably end on a cliffhanger.
Well the lack of a good sized fanbase probably has something to do with it too
